Ingredients
1Avocado
1cupGranulated Sugar
1/2cupBrown Sugar
1teaspoonVanilla Extract
2Eggs
2 1/2cupsGluten Free Flour(I used a Krusteaz Flour Blend, any 1-1 blend will work)
1teaspoonBaking Soda
1teaspoon Salt
10ounceChocolate Chips(milk, dark, or semi-sweet all work well!)
Instructions
Turn on oven to 350 degrees.
Mix your avocado(1), sugars(1 cup granulated; 1/2 cup brown), and vanilla(1 teaspoon) until smooth and creamy.
Add in your eggs(2), flour(2 1/2 cups), baking soda(1 teaspoon), and salt(1 teaspoon).
Fold in the chocolate chips(10 ounces) with a spatula.
Spoon onto your cookie sheets with parchment or a silicon mat, I used a tablespoon for this.
Bake for 10 minutes in the oven
Take out of the oven, and let them rest on the cookie sheet for an additional 2-3 minutes.
Remove them from the cookie sheet to a cooling rack.
Once cooled, store in an airtight container.
Notes
If you do not have an avocado on hand, other option are: 1 cup butter, OR 1/2 cup butter and 1/2 cup shortening, OR 1 avocado and 1/2 cup butter.If your looking for the crisp outside with a chewy inside, make sure you don't overcook in the oven and let them rest for a 2-3 minutes on the cookie sheet once pulled from the oven!
